Recipes + Dorito taco salad

Well summer is over and school Started and work started for me which means I look for easy and quick dinners. 
 Dorito taco salad is a meal that every member of my family ate. That equals success.

                     • 1lb ground beef
                     • 1 cup black beans 
                     • 2 romaine lettuce hearts
                     •  1 tomato, large 
                     • 1 cup Catalina dressing 
                     • 1 packet taco seasoning 
                     • 1/2 cup cheddar cheese
                     • 1 cup nacho cheese 

                   1. Brown and crumble the   
                     Beef in skillet on medium 
                     high. Drain grease. Add 
                     Taco seasoning and water. 
                      Stir until boil, simmer for 10 
                      mins on low. Let cool.
                   2. In a bowl mix together 
                       Chopped lettuce, black 
                      beans, tomatoes, and 
                      cheese. Add beef and 
                      serve or chill 
                      in refridgerator. 
                      When ready to serve add
                 Doritos and dressing

Letting go

We hello! I am hopefully back after taking sometime off. I had to focus on the summer and enjoying the time I had with my 3 amazing children.

Sometimes life can be full of joy and contentment, other times it can be filled with fear, anger and the unknowing. 
On Monday July 6th, our life got scary. My husband came home at a little later time than usual , but I just figured he had to work later, but then I look into his eyes and know that this was not a typical Monday. 
 The words, "I lost my job today" were said and I,at first was in denial and did not think it really happened, BUT it did.
 The tears began to flow and the worry of everything set in.
 We both knew this was a blessing because he was so unhappy, but we wanted to have control and have a job in place. Sometimes God has to push you out the door and get the ball rolling. 
 Through this process, Ryan and I are learning that we have to LET GO and trust God. His plans are much bigger and better than the plans we have for us, but the waiting is painful. The bills will start piling up and numbers will have to be scrunched tight. 
God has blessed us with a job I can work from home and not worry about childcare and can still pay some things with my income, but it is trusting that it will be enough. 

I (we) know the God will provide and not sure when or with what, but we need to just TRUST and know that GOD is in control and we will rest in that.
I just ask for prayers that a job comes soon so we do not have to get to the struggle point and not have to move , which we really want to advoid.
I found this binder on my daughters desk and teared up. How sweet is this.

Summer list

Well we are 2 weeks into our summer break, however because of all the rain we have gotten, it has been hard to enjoy the summer things we have on our list. 

Sometimes it is hard to figure out what to do without a plan in place. I had the kids help me make a list on a chalkboard with all the things we want to do and try to do all of them by summers end. They also wrote, so the handwriting is unique.

Something's on the list are things we do every summer , others are new and we want to do. 

We try keep activities cheap or free with maybe one splurge.

Freedom Covenent Church

On Sunday, our small group had the opportunity to serve breakfast to the homeless and then attend their church service.

 I will tell you that is the most humble experience. In the society today, everything is about more. We always want more and to be honest, I have thought at times I want more.
 You know what though? We do have more. We have jobs and food to feed our hungry mouths. Beds to keep us comfy and warm, showers to keep us clean, clothes to choose from. What else do we need? The only thing we could use more of is Jesus.
 It was a great experience for the kids to see and know that this breakfast may be the only meal they get for a day or even for a week. Some live in boxes or tents or wherever they can find a place to eat .
 We are so blessed beyond measure.

 One of the light all moments that I took away from the church service is , we should never feel bad about the blessings we have , because they are blessings from God.

Easy banana bread

I had some very ripe bananas and did not  want to throw them away so the girls and I decided to make easy banana bread.

  • 3 or 4 ripe bananas, smashed (I used four)
    1/3 cup melted butter
    1 cup sugar (they say you can easily use 3/4 cup, I went with a cup)
    1 egg, beaten
    1 teaspoon vanilla
    1 teaspoon baking soda
    Pinch of salt
    1 1/2 cups of all-purpose flour
  • Mash bananas 

    Mix the egg, bananas, vanilla in a bowl and then add flour last. 

    Pour the mixture in a 8x5 bread pan and cook for an hour @ 350

    This turned out so yummy. Next time I may add strawberrys to the mix. I bet that would taste even better.

Teacher gifts

I have taken a little tiny break from blogging. The stomach bug got our  house and we were down for the count and I had to finish the school year teaching. It got really rough and crazy for the last couple weeks.
 Now it is summer break and I can be lazy. Yay for lazy days of summer.

One of the posts I had in planned was to post the teacher gifts I gave the teachers at the end of the year.
I always try to do something simple, but meaningful.

 I always try to give books that describes the teacher or teaching in general. Books to me are the best gift. They can used year after year. I have the kids write a note in it and then I always add one as well. We sign are name and date it. 
I remember teaching and getting books with a note inside and I to this day, still use the books and remember who gave it to me.

I gave this book to the elementary teachers. It is about a class describing how unique each teacher is. 
I asked the kids in word to describe their teacher and that was he word we wrote in the page.

The preschool teachers got Mrs. Spitzers Garden.  The teacher in the book has a classroom of plants. She waters them everyday and makes sure they are growing . At the end of the book, the flowers have grown into beautiful plants, just like preschoolers blossom towards the end of the year. 
The kids love giving them and the teachers love receiving them. It's a win , win.

Super heros

We all know those moms that by 8:00 am they are dressed in nice outfits,makeup on, ready for the day. No bags under eyes, perky. Kids are well behaved. 
 There cars are crumb free, the kids are always put together. There house is clean , I mean no crumbs on the floor left over from breakfast, door handles not sticky, no scuff marks on the baseboards, no pee on the floor... Anyway get my drift?  That is not reality, that is a fantasy to me. 
 I know that I am pretty good mom. I do loads of laundry, make sure everybody has their favorite breakfast because we all know as soon as you cook the same thing for everyone, they will not want it.

My house may have some clutter and tiny toys in the corners, that I see everytime I walk in the room, but ignore. I may have more crumbs than I probably should on the counter. The dishwasher needs to be run ,  and spilled frozen corn spilled in the door of the freezer and I have no idea how long ago that happened.
 Being a super hero mom is being a kid , just like your kids. Have fun and enjoy the time. Believe me, it took me a long awhile to embrace this part of motherhood. Letting go of the things that don't really matter, but hugging the moments and things that do.

What I am saying is , the mom I described in the beginning, doesn't exist. If they do than they have a maid or nanny or help of some kind of help. 
We are imperfect and dishelved and that to me is a super hero mom.
We cannot do it all and if help comes along, take it, embrace the break. Ask for help, we are superheroes, not super moms who can do it all.

So let go of the mom you think you should be or want to be and be the mom
You know you are and be the superheroes our kids know we are. It does not matter to them about anything I listed above, but that you embrace them with your arms wide open and always know you are and will be their forever super hero.

Our calling as moms

As moms we have a calling. We are called to pray for our children;to pray that our kids will want to obey the voice of Christ on their own.
When we pray , we ask the Holy Spirit to draw each child to the lord, giving him the desire to be his obedient child. Christ like.
As powerful as our words are and as persuasive as we are,we as moms do not have the power to change our children's heart to follow Christ... This is why we pray for them right? Only GOD changes hearts.

Our job or calling as a mom is to be Christ like and follow Christ, but sometimes it can be an impossible job and challenging.
 We can be filled with courage, with God's ability.

God doesn't call the equipped,but equips those he calls."
We can keep going with confidence and give praise and glory to him.

Boy vs girl / old post

I decided to just pick a post and publish it. It is crazy when I read all my posts, to think so much has happened and how big the kids are. I plan on doing a similar post like this, but a lot  of these still stand true. I decided to keep the pictures because they are so small!

A hurtful promise

So how can a promise be hurtful?
As Ryan and I are preparing and a few months out for planting a church and follow Gods promise, 
We are going to feel pain of obedience and sacrifice.
Here is the thing, we LOVE our church and our small group is like family to us, BUT in order to follow Gods calling, we have to leave the church, our friends and our comfort zone.
Walking into the promise of what could be means leaving the comfort of what is.

God needs us to feel the pain before we can enjoy what is ahead. This is so hard for me to grasp. It scares me, yet excites me. 
I  am scared for change and starting over. I   am scared I will not be the woman God intends for me to be to new believers and  old believers.
I am excited because we are planting a church in an area that needs one. I am excited to spread the love Jesus to those who need it and will embrace it.
 God promises good things to happen and we have to understand that sometimes pain and obedience come with those plans. 
Ryan and I are so blessed to be given this opportunity to open and lead a fresh new house of God and do his work, however it is hard letting go of our control  and Let God have complete control.

 As we pray and be thankful , we also will grieve to what we are leaving and know that God promises through the pain of obedience.

Iced coffee

I posted on Instagram my afternoon pick me up was my homemade iced coffee and I had a couple requests for the recipe.

It is super easy to make.
                 •coffee ( cafinated or decaf)
                  • milk or almond milk or half    
                  • sweetener (I use stevia or 
   • I always add a little 
                    Chocolate syrup, but it can 

                Add coffee and milk
                Sweetner and anything else 
                Ice cubes


 Pour in cute mug or jar, pop a straw in and ENJOY!

Spring inside

I love signs of spring outside and I also enjoy it inside . I have a few peices that I added that let me enjoy spring inside.

I love terrainums, my mom has them everywhere in her house. They give that fresh spring/summer feeling. 

I love throw pillows. Pillow covers are the best right? I can change them out with every season, however I am digging these pillows right now though , so they are here to stay.

This table is right by my front door. It is one of my favorite spots. 

These simple tulips make me smile. It's the first flower that blooms and so many colors. 

And just because... I finally decided on my collage wall. I am sure I will trade out a few things , but overall  like it!

Maple syrup muffins

 These muffins are pretty tasty and easy.
I made these with my preschool kids and they were a hit. 
I thought I would share for you and the kids to make together and of course eat together.

                 Ingredients :
            2 cups flour
            2 tsp. baking powder 
            1/2 tsp.salt
             1 egg
             1/4 cup melted butter
             1/2 cup cup milk
             1/2 cup real maple syrup
  Prepare oven to 400 degrees
Sift together the flour,baking powder and salt.
Beat egg until light 
Add milk, and then mix in the flour mixture.
Add maple syrup and the melted butter

Pour into a well greased muffin tins until 2/3 full. Bake for 20 to 25 minutes or until muffins are golden brown.

Enjoy with a glass of milk!

Easter is a time to celebrate the empty tomb and that he has risen. He promised he would rise and he did!
As I was reflecting  about today, it came to me that I need Easter everyday. God promised to resurrect and he did. He promises to always be with me, to take care of my needs, everyday!
We had a great Easter and heard a great sermon.

Gods creations + faith

I had another post planned, but it was on my heart to write this. Nothing fancy, just something we did as a family.

This week my kids are on spring break and we were lucky enough to have Ryan home with us this week.
 We have been talking a lot to the kids  about Genesis and how God made everything and we would have not earth if it was not for creation day.
Today was a Genesis day. We went to a nature center that is close to our house. 
We walked up the trails, listening to the birds whistle, the leaves blow.
As I was watching the kids walk and look around, I was thinking on how dependent they are on us and how they trust us and learn from us, so I need to 
be more dependent on God, my faith
 I want to learn from my children , who are so dependent on us.   I want to be more like Jesus, I want I live through him, just as our kids live through us.

There was one moment where a cardnial was just sitting in the woods and we just stopped and embraced the moment . How cool is that to see a bird in the midst  of nature. 
A squirrel was eating a walnut and then took it back to his nest. Again, creation . How can we thank Jesus for what he created.

I love my 3 creations that  God gave me. I want to be the parent they depend on and I want to be the child of God who  depends on Jesus for everything.

I want to see Jesus like a child see's their Parents.
