resurrection eggs

Since Easter is approaching, I thought I would share a great idea to do with kids to teach them the real meaning of Easter.
We do Easter baskets in Easter, but we focus on that it is the day that Christ rose and we celebrate that.  The eggs are numbered for 12 days , so 12 days before Easter we begin the story.

1. Donkey :Jesus rode in a donkey to Jerusalem 
2.coins: judas was paid to help capture Jesus. 
3.cup: Jesus and his disciples
4. Pray hands : Jesus prayed to God in the garden 
5.sword: Peter drew his sword to defend Jesus and cut off a soldiers eat
6. Crown of thorns: placed it on Jesus 
head to mock him "King" of the Jews
7.Cross: Where they hung Jesus to die
8.Nails : Jesus was nailed to the cross one in each hand and his feet
9. Sponge: people not being nice offered  Jesus a sponge soaked in vinegar to drink
10.Linen: Jesus was wrapped in linen after his death
11. Stone: Jesus body was placed in a tomb and a large stone sealed his body inside 
12. Empty: on Easter Sunday Jesus was alive, he had risen from the dead.

Homemade crunchy granola

I have been having some stomach issues and finally fingered out that I have trouble digesting gluten, so going gluten free was the only option I could think of.
I began looking for easy recipes that are gluten free. Let me tell you, it's not as easy as everybody may think it is. 
When I was grocery shopping, I began to get overwhelmed because the prices were not budget friendly.
I knew that making things myself were the cheapest way to go.
Now, I do not make ALL the things. I still will buy things, but if I can make it I will.

I came across this recipe when I browsing through some cookbooks.

                   4 tablespoons canola oil
                  8 tablespoons honey( I used agave)
1/2 teaspoon kosher salt
3 cups old fashioned certified gluten-free rolled oats. (Not all oats are gluten free)
1 cup sliced almonds
1/2 cup dried cranberries(or fruit of your preference) 
1/2 cup of raisins

1. Preheat your oven to 350• line a rimmed baking sheet with parchment paper and set aside.
2. In a small saucepan over low heat, heat the oil, honey, and salt, stirring occasionally, until the honey has melted and the mixture is warmed throughout.(3-5 mins)
3. While the honey and oil are warming , in a separate large bowl,add the oats and almonds and stir until well combined. When the honey mixture is ready, pour it over the oat mixture and stir with wet spatula (so honey does not clump )together until the honey mixture has costed the oat  mixture completely.
Scrape the he mixture into the prepared and baking sheet and spread it out in single . the baking sheet in the center rack  and bake for 15 mins or until golden brown. To ensure even baking, rotate the baking sheet once and stir  the granola once along the way.
Remove the baking sheet from he oven and reduce the heat to 309.
Allow granola to cool for about 10 mins on the baking sheet and them return it to the large bowl, add the cranberries and raisins and stir until they are evenly distributed throughout the granola.
Spread the granola our in a single layer on the baking sheet.
5. Return the baking sheet to oven and bake for another 5 to 10 mins,until the granola is a pale golden brown. Cool the granola completely on the baking sheet. It can be stored in a airtight container at room temperature for at least 2 weeks. 

It is so yummy and inexpensive.

When Ryan lost his job in July, we knew God had a plan, but could not understand why this was part of it. 
For the longest time I knew Ryan was suppose to paster. The joy he has in his heart when he leads others in knowledge about the Lord.
The lord opened a door at Ford motor company in management. As I explained in this post, shift work was involved and long hours and even some weekend hours. This was a whole new change for us. The lord knew that this opportunity would give him the flexibility to start taking seminary classes though. 
 My heart was filled with joy when he took this step, however, my heart was starting to feel anxiety, worry, questioning so many things and I was starting to think that being called to be a pastors wife,was not the calling anymore. 

I continued to pray that God would soften my heart and allow his work to work in my heart. 

I kept going back to this verse. 
"The lord said, It's not good for the man to be alone. I will make a helper suitable for him." (Genesis 2:18)

I began to think, that if I am his wife, my role is to support him in everything. The lord did not want him to do this alone.

I am not sure what my role exactly will be, but I do know I have to lead by example.

1. Partner with him
2. Pray continuously for him in different matters in ministry. Being a pastor can be challenging and disheartening and Saton will use that to his advantage.
3. Be the leader of the home and family 
4. Listen to him, encourage him, and really listen. 

"Let us make (human beings) in our image,in our likeness and let them rule over the fish of the sea and the birds of the air,over the livestock, over all the earth and over all the creatures that move along the ground." Genesis 1:26

Ministry can be really tough and ugly and Satan will always be knocking on the door and hoping we let him in. 

As I think more about the future of being a pastors wife, 
I also feel scared and know that 

1. I need to watch out for my husband. What if he gets overworked, overwhelmed? Make sure he knows his (our boundaries)
2.stand with him when times  get tough. 
Even in disagreement, respect him, pray for wisdom.
2. Not take things personally. This will be hard for me. People in the church can be mean and cast judgement and I need to grow a tough skin and just let it go.
3. Do not allow "watchers" or those who constantly watch us control what is expected out of us. 
4. Protect my children. I am scared of those people who have Satan as a member of the family and will do everything to control the pastor life of my children. 

This time of preparing will be long and hard. It will be filled with prayer after prayer and know that the calling of husband being a pastor is serious and everyday will get stronger.

valentine traditions on repeat

Since another Valentine's Day is approaching, I thought I would share some traditions on Valentine's Day. 
Valentine's Day is just another day for me. In my opinion I do not need a day to show how much I love my husband or my  kids. I know , such a Debbie Downer. 
I do remember when I was a teenager and if I did not have a boyfriend on Vday I was a hot depressed mess. Why? How silly does that sound?
 Anyway enough with that sappiness.
 What I remember about Valentine's Day is my mom would decorate the table and make a good breakfast. She would always get us a little something. 
  I have continued those memories by decorating the table every Valentine's Day and cook a fun breakfast. 

I better get moving on this years table. 

When the kids get up and see the table the delight and excitement I see in their eyes is worth the time I put in to making sure everything is perfect. 
 I love the memories that my mom created and I love the memories I am creating for my kids.

In this season

The past 6-7 months have been a life changer for my family. Last July my husband lost his job  and as much as we knew god was in control, it was very hard to let go and rest in him. Ryan was very unhappy with his past employer and wanted a change, but this is not the change we wanted. We wanted to be in control. We soon came to realize that we are not suppose to be in control, God is.

In that season of life....
- we experienced job loss
- we watched our kids cry every night because they were not sure if we going to have to move, if we had money for birthdays that were coming up.
-We felt heart break
-Ryan and I got closer to each other and to God
- We experienced the kindness from friends and family

We were involved in a church plant during that time and we knew that is what we needed to be doing and felt peace about it. We also knew we had to step away from it and focus on the family and concentrate on the future.
It was such a hard step for us to take, but we knew it was the way it needed to be.
As life is an adventure, we must enjoy the ride no matter where it takes us.
The ride on the bumpy road was not as long as we thought it was going to be.

In August our prayers were answered and Ryan accepted a management job at Ford motor company.
We praised and thanked God so many times and knew this is where he needs to be. we did not understand why, but again, we are not in control.
Ford was shift work and it was very different than what we were accustomed to.
Night shift was so hard and being a single mom for 3 months was exhausting.

We have made it through night shift and now enjoying daddy/husband being home at night.

 In this season...
-We have an income
-We experienced a job hire
-We watch our children being joyful
-We feel peace
-We are still closer with each other and 
- we are able to join the church plant family 

Every thing in life is a season and some are better than others, but we could have not done it without the Lord!!
Life is an adventure, enjoy the ride

At this moment I am...
-  preparing to be a pastors wife
-enjoying my husband being joyful
-supporting my husband as he goes to seminary
-enjoying the adventure
-finding joy in everything

Yummy protein balls

Well it's been a long time since I have posted. I know I have lost some followers, but those who still are, thank you and hopefully I am back.
 We have had quite the changes in our life and I will save that for another post and I had to focus on family and getting through the struggle and hard to put this blog on hold.
So on with the  yummy recipe.

 I am always looking for quick healthy snacks to grab really quick and something my kids will eat. 
These balls are so good and my kids LOVE them and it's hard to find something they ALL like. The ingredients are things you probably already have at home.

3 cups oats
1/2 cup flaxseed meal
1 cup natural peanut butter
1 cup honey
1/2-3/4 cup mini chocolate chips. 
*i like to use my pampered chef meat grinder thing to mix these ingredients!  I also use the small scoop and scoop them onto a cookie sheet. Refrigerate for a bit to set up and then put in container. I store mine in fridge!  
*you could also add nuts if you wanted!!
 I have used almond butter and added flax seed and chia seeds. The options are endless.

 On another note, time has come to sign this peanut up for kindergarten. It is so bitter sweet for me being this is my baby.
God has special plans for this girl. I cannot wait to see it and watch her get more independent and grow, but I wish I could stop time and just soak up all the little girl I can.
